Egg powder

Egg powder is a dry concentrated melange of chicken eggs. Fresh eggs are freed from the shell using special machines, then the yolks and whites are mixed to a homogeneous mass (melange), which is filtered and dried at high temperatures. Egg powder is small granules of light yellow color, well soluble in water. The product has a rich egg flavor.
In general, egg powder is a good substitute for eggs. Its chemical composition is in no way inferior to fresh eggs. Egg powder is actively used in the production of confectionery and semi-finished meat products. It is shipped in bags of 25 kg, from 20 tons.
